Gluten Free Chai Pumpkin Spice Thumbprint Cookies


It finally felt like the start of fall yesterday morning. I noticed the leaves changing color out my window, and the air was crisp on the walk to my car in the morning. Now that it is no longer 80 degrees every day, I am finally feeling in the fall mood and since it is mandatory to post one pumpkin recipe a year, I thought I would share this yummy cookie. Believe me, these are all you need to get you in the fall mood even if the weather decides to warm up again next week. :( I spotted these Pumpkin Spiced Hersey kisses at Target the other week and knew if I didn't make something with them quick, I would consumer the whole bag in a matter of days. 


Thankfully I came across this delicious blog-  Pass the Sushi which showcased an innovative recipe using these little fall delights- Chai Pumpkin Spice Thumbprints. Although, Pass the Sushi is not a gluten free blog, I made a slight tweak to the recipe to make it gluten free tasty :) Simply substitute the 1 and 3/4 cups flour with your favorite gluten free flour. Mine is currently Trader Joe's Gluten Free All Purpose Flour. I have been using it for all my baking, to thicken sauces and coat chicken when making a breaded dish. 

These are best right out of the oven, as the kiss melts over the cookie, but don't get me wrong, I enjoyed them well after they cooled. Thank you Pass the Sushi for sharing this yummy recipe! I look forward to many more delicious creations that you share :)
