Gluten Free 6 Layer Taco Dip


No that is not a typo- this is a recipe for 6 (SIX) layer taco dip, aka 7 layer taco dip minus the olive layer. So this could be 7 layer taco dip if you want to add the olives, but you get what I mean :) Net Net- I am not a fan of olives!
One of our close family friends made this delicious dip for our Housewarming Party (see all the details HERE) and it was a hit! The dip was served in our first official serving dish which was so thoughtfully signed.


I made this dip twice last weekend for a friends get together and football BBQ, both times gone in 60 seconds, ok well it lasted a little longer, but needless to say, GONE by the 1st quarter of the football game. Enjoy!

Ingredients


16 oz can of refried beans, (you can use the jalapeno Rosarita brand for a little extra flavor, heat in microwave for 30 seconds or so they spread easier)
2-3 mashed avocados mixed with a 1 tbsp. lemon or lime juice 
1/2 package of McCormick's Taco Seasoning mix (Be careful as Lawry's Taco Seasoning contains wheat)
3 tbsp. mayo
2 tbsp. sour cream 
4-oz. mixed shredded jack/cheddar cheese
1 bunch green onions, chopped
2-3 tomatoes seeded and chopped or 15 cherry tomatoes finely cut

Layer refried beans, smashed avocados, taco spread, shredded cheese, green onions and tomatoes. Serve with corn tortilla chips. easy & delicious!
