Gluten Free Finds at Costco (Part 2)

This past weekend I made another trip to Costco and found even MORE products that are gluten free. Could you believer it? I first featured my finds here (Part 1), but I am happy to share even MORE. Wouldn't it be great if this post became a weekly feature? Costco is listening to consumers, and it is so wonderful to have OPTIONS when grocery shopping, times are changing! I have provided the link to the product website and full ingredient list (if available). What gluten free products have you come across at Costco?
 (FYI- I have not tried all of the below items, but merely want to spread the word and share products I have come across. As always, I recommend reading the entire ingredient list before purchasing in order to be 100% certain there are no hidden traces of gluten)

Gluten Free Breakfast Egg Sandwich

I constantly look forward to the weekends, especially ones that I can set aside the whole morning to spend in the kitchen. As fun as it is to go out for breakfast and spend the morning sipping coffee at a local hot spot, I tend to lean towards starting my day at home on Saturday and Sunday. Although weekend mornings are known for long, drawn out meals with mouth watering splurges I find there to be no reason  why we can't enjoy "fancy" prepared meals on week day mornings, FYI I use the word 'fancy' loosely. Don't get me wrong, cereal or Greek yogurt with fresh berries is one of my most relied on breakfast items, but it is nice to change it up every now and then. So last Wednesday morning, I did just that. I woke up 10 minutes earlier and transformed my standard scramble egg dish into a top notch egg sandwich that would be delicious no matter what day of the week it is. 

The icing on the cake or should I say spicing on the sandwich was a sprinkle of Tajin classic seasoning. A blend of Mexican chilies with lime and salt is the perfect balance of spice and flavor. O did i mention it is gluten free? I became in love with Tajin while our family was on vacation in Puerto Vallarta last year. We sprinkled it on everything, so I thought it would be the perfect kick to start a work day. As they say- breakfast is the most important meal of the day, so why not spend a few more minutes making a healthy bite to start a work day off right?

Ingredients:
2 slices of gluten free bread (my preference Rudi's Multigrain Sandwich bread)
1 egg
1/4 of an avocado (use the whole 1/2 if preferred, who am I to judge, I LOVE avocado)
Several cherry tomatoes, cut in half
Sprinkle of shredded cheese
Tajin Classico Seasoning

Directions:

1. Spray a saute pan with cooking spray. Warm the pan on medium heat before adding the egg.
 2. Once pan is warm gradually slide egg into the center of the pan. 
3. While the egg is cooking, toast both slices of bread. 
4. Once the egg turns white, use a spatula to separate the edges of the egg from the pan, be gentle. Sprinkle shredded cheese and Tajin Classico seasoning. Reduce heat to low and set egg to the side.
5. Once the bread is toasted, spread avocado slices on one side. Place tomatoes cut side down on top of the avocado.
6. Place egg on top of the avocado and tomato. Place 2nd slice of bread on egg and ENJOY!
The McMuffin ain't got nothing on this breakfast sandwich!
