French Toast made with LOVE

Mark and I decided to celebrate Valentine's Day a little early this year, with a Sunday morning breakfast made with an extra helping of love. I relied on one of my favorite gluten free breads, Rudi's, to make gluten free french toast. They recently enhanced their recipe making each slice more delicious, soft and yummy. This breakfast favorite fills my heart with joy and when made into a shape of a heart, starts the day off with an extra serving of love. Just the way every day should start. Add a slice of bacon under your heart shaped french toast and its as if Cupid shot his arrow right through your breakfast, how could it not be amazing?

Makes 6 slices of french toast


4 eggs
4 tablespoons of milk
a "healthy" sprinkle of white sugar
Rudi's Gluten Free Multi Grain Bread
heart shaped cookie cutter
fresh strawberries
powder sugar
maple syrup 


1. Mix together eggs, milk and sugar in a glass pie dish with an electric mixer for 5 minutes on high or until bubbles form.
2. Dip and coat each side of the bread slice in the egg mixture. Press down lightly so the bread absorbs but does not soak each slice. 
3. Preheat skillet on low with a coating of oil which just covers the entire surface of the pan. 
4. Place each slice on the skillet, heating slowly until golden brown. Turn over and brown the other side. Transfer to a plate and let stand for a few minutes.
5. Once cooled, press a heart shaped cookie cutter into the center of the bread. 
6. Serve with fresh strawberries, maple syrup and a sprinkle of powder sugar.
