Simple Quinoa Balsamic Salad

Looking for a simple salad that is light and bursting with flavor? Well today is your lucky day! A few weekends ago I came across this wonderful bite at a bridal shower. One of my best friends from college is a Registered Dietitian and is always thinking of me and what I can eat when we're together. She had come up with this simple but delicious combination and I have let you in on a little secret, I have had it everyday for lunch since! Serves 4; 


1 cup of quinoa (I prefer Bob's Red Mill Whole Grain Quinoa)
1 head of lettuce
1 cup tomatoes, grape or cherry
1 avocado
Balsamic Vinaigrette dressing to taste 


Bring 2 cups of water to a boil in a saucepan. Add quinoa, bring back to a boil, cover and cook over medium heat for 15 minutes or until water is absorbed. In the meantime cut the tomatoes in half, and avocado into  slices. Place lettuce, cooled quinoa, tomatoes and avocados in a salad bowl and pour dressing over salad.
