  2. Hi Blake,

Thanks for stopping by! Yes, if the recipe calls for 1/2 cup wheat flour, you need to add together all four items in the same line.
    For example: 1/2 c wheat flour= 1/3 rice flour + 2 Tablespoons Potato starch + 1 tablespoon tapioca starch + 1/4 teaspoon xantham gum.

    Good luck!

  3. Is there anything that can be used in place of the rice flour? The texture reminds me of sand and even though it tastes okay, the texture really bothers me especially in bread!

    1. Hi & thanks for stopping by!

I would recommend replacing brown rice flour with amaranth flour or sorghum flour. Neither have a strong aftertaste and are very similar in texture to a wheat flour product. I feel the same way about the rice flour, but have found the texture is less granular if you use a "superfine" version. One of my favorites is Authentic Foods Brown Rice Flour Superfine. I have used it in several baking recipes, one of my favorites is the Chocolate Chip Butterscotch Oatmeal cookies recipe, its on my blog-

      Hope that helps!
