Homemade Gluten Free Oreos


I have a confession to make I'm guilty of licking the vanilla cream filling off each side of an Oreo. Yes, it's true! After playing with fire one too many times, I was delighted to find this recipe from Smitten Kitchen, Homemade Oreos! I substituted the flour with one of my favorites- Authentic Foods GF Classic Blend and added xantham gum which gives the cookie greater thickness and texture. 

I was happily surprised with how easy the dough was to work with and roll into small balls. The only problem I had with this recipe was that it was too good and I didn't want to share. I guess I can always make a second batch, right?

Ingredients:
Cookies:
1 1/4 cups gluten free flour (I used one of my favorites- Authentic Foods Classic Blend )
1/2 cup unsweetened cocoa powder
1/2 teaspoon xantham gum
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
1/2 cup plus 2 tablespoons butter, room temperature, unsalted
2 eggs

Filling: 
1 stick butter, room temperature
1/2 cup vegetable shortening
4 cups confectioners’ sugar
4 teaspoon vanilla

Directions:
  1. Preheat oven to 375 degrees
  2. Mix gluten free flour, unsweetened cocoa powder, xantham gum, baking soda, baking powder, salt and sugar together
  3. Cut in butter using a pastry blender until butter pieces are pea-sized
  4. Add eggs, one at a time. Mix with dry ingredients until well incorporated
  5. Roll dough into small balls and place on a greased cookie sheet
  6. Bake for 10 minutes
  7. Immediately remove cookies to a wire rack or brown paper bag surface to cool.
  8. While cookies are cooling prepare the filling mixture
  9. Mix butter and shortening at low speed. Gradually beat in sugar and vanilla. Mix on high speed for 3 minutes or until filling is light and fluffy 
  10. Fill a pastry bag with the filling mixture. Squeeze a small amount of filling into the center of one of the cookies. Place another cookie on top and gently press down to work the filling evenly to the outsides

I hope everyone had a great week! I'm definitely looking for to the Olympics starting this weekend and running my first 5K!! I wish everyone an amazing weekend full of gluten free goodness! Below are a few gluten free items that made my week:

Gluten Free Strawberry Shortcakes


Strawberry shortcake, need I say more? I am not sure why I crave a warm, flaky, butter biscuit when it is 80 degrees outside, but there is something about this delicious dessert that just screams summer! This recipe is also conveniently located on the back of the Gluten Free Bisquick box, coincidence? I think not!
Its amazing how easy the recipe was to follow, its a perfect weeknight dessert with fresh strawberries (I also added some blueberries) and a dollop of whip cream! The texture is very similar to the regular Bisquick mix.  I have found that rather than dropping the batter by the spoonful onto the cookie sheet, it is best to shape each biscuit them by hand.

2012 San Diego Gluten-Free Food Expo

I’m so excited to announce the second annual San Diego Gluten-Free Food Expo! The event last year was so successful, the location of the 2012 event has moved to the Del Mar Fairgrounds to accommodate more gluten free vendors, exhibits and gluten free enthusiasts.

The Wm. K. Warren Medical Research Center for Celiac Disease at the University of California, San Diego is working with various members of San Diego and Southern California celiac disease support groups to plan a community event that will include:


  • Delicious gluten free food samples 
  • Vendors selling gluten free products
  • Information tables from local support groups

Attendees will also be able to:
  • Ask questions & get answers directly from the source
  • Meet individuals within the San Diego gluten free community
  • Support the educational and awareness programs conducted by the Warren Medical Research Center for Celiac Disease

Highlights of a Glutenfree Girl's Week

Still to this day when I find something gluten free anywhere outside of my house I jump up and down in excitement, not literally but you get the picture. After a moment I regain my composure and then immediately reach for my phone to take a picture. It doesn’t matter where I’m at, if there is something gluten free there is a photo shoot 2 seconds later.
With that being said I would like to start a new post series- titled "Highlights of a Glutenfree Girl's Week". Each week I would like to capture my gluten free finds and share them with my famous snapshots. I can’t believe how many times I come across a new gluten free item throughout the week. It’s exciting to see the community embracing dietary restrictions and making an effort to adjust their menu, store or selection to cater to our needs.

A picture is worth 1,000 words, I think a gluten free picture is worth 2,000!
