Blueberry Muffins with Honey Butter

A morning classic with a dash of sweetness! I have been craving a fresh baked muffin in the morning to start my day and was excited to try a new baking mix this past weekend- Gluten Free Pantry Muffin & Scone Mix. Click HERE for other Gluten Free Pantry baking mixes.This delicious line of gluten free mixes is created by Beth Hilson, Food Editor of Living Without and President of the American Celiac Disease Alliance. To top off an already flavorful muffin, I smothered honey butter on each side...perhaps this now qualifies as a dessert? Morning, noon or night, blueberry muffins are delicious, espcailly when gluten free!

INGREDIENTS: White rice flour, sugar, potato starch, corn starch, baking powder (corn), salt, sodium bicarbonate, xanthan gum.
