Gluten Free Tortilla Soup!

I really like EASY to make dinners during the work week, after a long day at work there is nothing better than a great meal that doesn't take ALL night to prepare. I usually have a tough time finding pre-made gluten free soups but after reading the ingredient list several times I was surprised to find no gluten or wheat in Bear Creek Country Kitchens Tortilla Soup!
It's SO Easy To Make!

1. Bring 8 cups of water to a rolling boil.
2. Whisk in soup mix, reduce heat to medium,
3. Simmer uncovered for 10-15 minutes, stirring occasionally.

I added a few slices of avocado, crushed tortilla chips and a dollop of sour cream!

I apologize for being MIA! Don't worry though because I been snapping gluten free shots left and right with my iPhone and baking/cooking up a storm! Can't wait to share with you, first off...

I visited San Diego's Premier Natural Foods Grocer!

My mom has been raving about Jimbo's gluten free selection, so I decided one night to make a run to this gluten free gold mine! The selection was extensive and the prices were VERY reasonable! My favorite though was the fresh bakery, check out what I found!

My most exciting find- Choco-Chocolate Chip Gluten Free Cake!

Picked up a few baked goods-
Cranberry Scone for $2.29 , Blueberry Muffin for $2.29 and a Chocolate Chip Walnut cookie for $1.39

Gluten Free Strawberry Cupcakes

So I have been on a cupcake kick! Last week vanilla with butter cream frosting shown HERE and this past weekend STRAWBERRY Cupcakes with Strawberry Cream Cheese frosting, sound amazing right? Well they definitely were! I just love how strawberries are in season, I want to make strawberry everything! Stay Tune!

I was looking for a simple recipe that I had all the ingredients already and didn't have to purchase anything specific to make a yummy gluten free cupcakeI finally came across THIS recipe on a new found gluten free blog, Gluten Free Betty. Betty states that this dessert is one of her husband's favorite and he isn't a Celiac so I knew these were it! Thanks to Betty they were amazing! Enjoy!

Gluten Free Strawberry Cupcakes- Ingredients

1/2 cup sugar
1/2 cup (3 oz package) Jell-O strawberry mix
2 eggs
1 1/4 cups Authentic Foods Flour blend
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon xanthan gum
1/2 cup oil
1/2 cup milk
1 teaspoon vanilla 
6 strawberries; chopped and mashed or pureed to equal 1/2 cup

1. Preheat oven to 350 degrees F. In a large bowl beat together sugar, Jell-O and eggs at medium speed for 1 minute.

2. Add flour, salt, baking powder, xanthan gum, oil, milk and vanilla and mix on medium for 1 minute.

3. Pour batter into individual cupcake papers filling each 2/3 full. I like to use my ¼ cup measuring cup to spoon batter. 

4. Bake cupcakes for 20 minutes or until inserted toothpick comes out clean. Another checker to determine if the cupcake is done is to press lightly on the top middle of the cupcake and if the cupcake bounces back it’s done!

5. Remove cupcakes and let cool for a few minutes and then transfer to a wire rack to finish cooling.

Strawberry Cream Cheese Frosting- Ingredients

2 ounces cream cheese, softened 
2 Tablespoons butter, softened 
1 strawberry, chopped & mashed or pureed (1-2 Tablespoons) 
2 cups powdered sugar 
1/2 teaspoon lemon juice

Mix together cream cheese, butter and pureed strawberry until well combined. Add in lemon juice. Add powdered sugar and mix on low until combined and then mix on high for 1-2 minutes until frosting is light and creamy. 

Frost away! Add a sliced strawberry on top for an extra dash of strawberry! YUMMY!

Midweek Gluten Free Treat!

Last night after a long day at work I was so excited to get in the kitchen and focus on baking instead of all of the other stresses of the day. I decided homemade cupcakes and was thrilled with the outcome. I followed this SIMPLE recipe at Cupcakes Take The Cake and was pleased with the end result. I added a sprinkle of green for the month of St. Patrick's Day!
