Gluten Free Peanut Butter Brownie Burgers


So I know it isn't summer, but I couldn't help but make these! Baking isn't a seasonal thing, right? I found the original recipe on Cupcakes and Cashmere but made a free changes to make GLUTEN FREE! One great thing about this burger recipe is that lettuce wrapped/protein style isn't even an option, words I am sure all my fellow Celiacs are familiar with.

I found a YUMMY peanut butter cookie recipe on gluten-free girl and chef's website using only 4 ingredients, none of them being flour, even better!



I also was able to use one of my favorite brownie mixes: Pamela's Products Wheat-Free & Gluten-Free Chocolate Brownie mix. One of my favorite things about this mix is on the back Pamela lists a number of ways to prepare the mix depending on how you like your brownies, making them versatile for every brownie lover depending on your allergy and/or taste.




 Start the grill...or should I say oven?

Ingredients:

Burger Buns:
Peanut Butter cookies:
1 cup peanut butter
1 cup white sugar
1 teaspoon baking powder
1 egg

Burger Meat Patties:
Pamela's Products Wheat-Free & Gluten-Free Chocolate Brownie mix
1 egg
1/2 cup oil
1/4 cup water
Flower shaped cookie cutter for meat patties

Ketchup:
White frosting with red food coloring added

Lettuce:
Coconut flakes with green food coloring added



1. Burger Patties/Brownies- Preheat oven to 350 degrees F. Mix together all ingredients and pour into a 13x9 inch pan. The directions on the mix state to use a 8x8 or 9x9, but I prefer a skinny pattie, that is why i choose to use a bigger pan. Bake for 15 minutes or until inserted toothpick comes out clean. Let cool for 30 minutes. Once cooled, use flower cookie cutter to make the meat patties.



2. Buns/Peanut Butter Cookies- Preheat oven to 350 degrees F. In a large bowl mix peanut butter and sugar together. In a separate bowl mix baking powder and egg together and add to peanut butter/sugar mixture. Once mixture is well blended roll dough into 2 inch balls. Roll in white sugar before placing on a greased cookie sheet. Bake for 8 minutes. Let cool on baking sheet for 5 minutes and then transfer to wire rack.



As the brownies and cookies are cooling...prepare the additional burger ingredients:



Ketchup- depending on the number of burgers you are making, mix desired amount of frosting in a small dish with 3-4 drops of red food coloring.

Lettuce- Mix a generous amount of coconut flakes with green food coloring in a separate bowl.

Other burger toppings- Mustard- white frosting with yellow food coloring. ( not shown in picture)
