Gluten Free Chocolate Chip Cookies

I can't believe I haven't featured a gluten free chocolate chip cookie recipe. The day after I found out I had Celiac I was in the kitchen determined to make a delicious gluten free chocolate chip cookie, a treat that I think doesn't need a special occasion to make. I decided to try Sustainable Pantry's Gluten Free Chocolate Chip Cookie Mix over the weekend and am so glad I did! The cookies were crispy on the outside and soft and chewy on the inside. The recipe on the back of the package was very simple to follow and only took a few minutes to prepare the dough. What's even better is that The Sustainable Pantry is based here in San Diego; I always love supporting local businesses. Additional Ingredients:
1/2 cup butter
2 eggs
1 teaspoon gluten free vanilla extract
