Gluten Free Chocolate Chip Cookies


I can't believe I haven't featured a gluten free chocolate chip cookie recipe. The day after I found out I had Celiac I was in the kitchen determined to make a delicious gluten free chocolate chip cookie, a treat that I think doesn't need a special occasion to make. I decided to try Sustainable Pantry's Gluten Free Chocolate Chip Cookie Mix over the weekend and am so glad I did! The cookies were crispy on the outside and soft and chewy on the inside. The recipe on the back of the package was very simple to follow and only took a few minutes to prepare the dough. What's even better is that The Sustainable Pantry is based here in San Diego; I always love supporting local businesses. Best of Gluten-Free Awards- Cast your vote!!


It’s that time of the year again; the 2nd Annual Best of Gluten-Free Awards are now taking place.
Just within the 4 years that I have transitioned to a gluten free diet the number of gluten free products within our local grocery stores has skyrocketed. Now more than ever gluten free products are available at more and more grocery stores across San Diego County.

The ironic thing is that when I was first diagnosed the lack of gluten free products offered use to stress me out, NOW that the grocery stores are flooded with gluten free products I have a new stress- I’m constantly thinking am I getting the best gluten free product? Which one would the gluten free community suggest? Am I going to like this brand?

Over the years I have heavily relied on the gluten free community to lead me in the right direction especially when selecting the best gluten free bread or the best flour to use for baking. Now there is another resource and it covers every category of food you could think of.

Gluten Free Find @ Trader Joe's

This past Saturday I was shopping at Trader Joe's and was overwhelmed with excitement when I spotted Udi's  Gluten Free Bread lining the shelves in the bread section. I couldn't believe my eyes! If you haven't tried Udi's, now is the perfect opportunity to try a piece of gluten free bread that doesn't demonstrate the same characteristics as a rock, need I say more? :) 
I did a product/location search on Udi's website and noticed Trader Joe's does not appear as an option to purchase Udi's bread in the San Diego region. I contacted Udi's to see if this is a temporary offering or if Trader Joe's will start to carry Udi's bread full time. I have read on other gluten free blogs across the country that Trader Joe's has carried Udi's bread for several years so I am hoping they are here to stay! Such a great price too at $4.99 a loaf!

Once I hear from Udi's I will update my post, but in the meantime run to Trader Joe's for Udi's bread!

My Gluten Free Wish List

Happy Monday everyone! I have been thinking A LOT lately of all the foods and yummy treats that Celiacs go without. I know "Debbie Downer" over here, don't get me wrong compared to 5 years ago, companies, restaurants and bakeries have made great strides in providing to our needs, but I still thinking, "I can't have that..."

I am asking you for any recipes, tips or ideas for the following foods. I am anxious to get in the kitchen and try to create my own versions of the 10 below items but I could use a little help!

  1. Pita Bread
  2. Churros
  3. Pop Tarts
  4. Sourdough Bread
  5. Cheetz-Its
  6. Puff Pastries
  7. Ciabatta bread
  8. Wraps that don't break apart as soon as they are rolled together
  9. Girl Scout Cookies specially Thin Mints
  10. Lucky Charms cereal- I know not healthy at all, but a girl can dream :)

I would love to hear from my fellow Celiacs on their experience in making any above...I promise if I create anything yummy I will be sure to share :)

Little Lovebug Heart Cookies- Gluten Free of course!

Valentine's Day is next Tuesday and of course I thought it was a perfect reason to bake something SWEET! I have been anxious to use the Sustainable Pantry Sugar cookie mix I have had sitting in the pantry just waiting for the perfect reason to use it! I found these adorable cookies on Pinterest and like all other recipes was determined to make gluten free!

Ingredients:

Heart Sugar Cookie: 
Sustainable Pantry Gluten Free Sugar Cookie Mix
1 egg
3/4 cup butter
1 teaspoon gluten free vanilla extract
Heart cookie cutter

Buttercream Frosting:
1/3 cup butter, softened
1/4 cup cream or evaporated milk
1 teaspoon gluten free vanilla extract
1/4 teaspoon salt
4 cups powdered sugar, divided

Decorating:
Wilton's Black Decorating Icing
Wilton's Red Sparkle Gel
Rainbow crystals sprinkles
Sugar Cookie Ingredients
Buttercream Frosting Ingredient
Decorating Ingredients
1. Empty content of mix into bowl. Combine all dry ingredients. Cream 3/4 cup butter until fluffy. Add 1/2 cup of the flour mix and combine. In a separate bowl add egg and vanilla extract together and then add to the butter/flour mixture. Mix dough till it sticks together. 



2. Cover surface of counter with wax paper so that the dough is easier to roll out. Sprinkle gluten free flour on wax surface and rolling pin. Roll out dough and cut with heart shaped cookie cutter. 



3. Bake for 8 to 10 minutes at 375 degrees F. Cookies are down once inserted tooth pick comes out clean. Let cookies set on baking sheet for 5 minutes and then remove to wire rack to cool.

As cookies are cooling you can begin to make the yummy buttercream frosting...

1. Place butter in mixer bowl and beat about 1 minute or until creamy. Add cream, vanilla, salt and 1 cup powdered sugar. Using mixer stir for about 30 seconds. Occasionally stop and scrape the bowl. Mix on medium for 1 1/2 minutes or until well blended. Gradually add remaining 3 cups of powdered sugar and mix until well blended. Add several drops of red food coloring and turn to the highest speed and beat for 1 minute or until smooth. 


2. Decorating:
For LadyBug cookies spread the buttercream frosting evenly leaving the bottom portion of the cookie blank. Spread the black frosting in the triangle portion of the heart cookie. Outline the red frosting area with the red sparkle gel icing. Pour sprinkles onto a plate and dip the red edges of the cookies into the sprinkles.

Gluten Free Peanut Butter Brownie Burgers


So I know it isn't summer, but I couldn't help but make these! Baking isn't a seasonal thing, right? I found the original recipe on Cupcakes and Cashmere but made a free changes to make GLUTEN FREE! One great thing about this burger recipe is that lettuce wrapped/protein style isn't even an option, words I am sure all my fellow Celiacs are familiar with.

I found a YUMMY peanut butter cookie recipe on gluten-free girl and chef's website using only 4 ingredients, none of them being flour, even better!



I also was able to use one of my favorite brownie mixes: Pamela's Products Wheat-Free & Gluten-Free Chocolate Brownie mix. One of my favorite things about this mix is on the back Pamela lists a number of ways to prepare the mix depending on how you like your brownies, making them versatile for every brownie lover depending on your allergy and/or taste.




 Start the grill...or should I say oven?

Ingredients:

Burger Buns:
Peanut Butter cookies:
1 cup peanut butter
1 cup white sugar
1 teaspoon baking powder
1 egg

Burger Meat Patties:
Pamela's Products Wheat-Free & Gluten-Free Chocolate Brownie mix
1 egg
1/2 cup oil
1/4 cup water
Flower shaped cookie cutter for meat patties

Ketchup:
White frosting with red food coloring added

Lettuce:
Coconut flakes with green food coloring added



1. Burger Patties/Brownies- Preheat oven to 350 degrees F. Mix together all ingredients and pour into a 13x9 inch pan. The directions on the mix state to use a 8x8 or 9x9, but I prefer a skinny pattie, that is why i choose to use a bigger pan. Bake for 15 minutes or until inserted toothpick comes out clean. Let cool for 30 minutes. Once cooled, use flower cookie cutter to make the meat patties.



2. Buns/Peanut Butter Cookies- Preheat oven to 350 degrees F. In a large bowl mix peanut butter and sugar together. In a separate bowl mix baking powder and egg together and add to peanut butter/sugar mixture. Once mixture is well blended roll dough into 2 inch balls. Roll in white sugar before placing on a greased cookie sheet. Bake for 8 minutes. Let cool on baking sheet for 5 minutes and then transfer to wire rack.



As the brownies and cookies are cooling...prepare the additional burger ingredients:



Ketchup- depending on the number of burgers you are making, mix desired amount of frosting in a small dish with 3-4 drops of red food coloring.

Lettuce- Mix a generous amount of coconut flakes with green food coloring in a separate bowl.

Other burger toppings- Mustard- white frosting with yellow food coloring. ( not shown in picture)

Thursday Trader Joe's Find

On Sunday I like to prepare for the coming week's meals and especially lunches. Although it is nice going out for lunch during the work week, my experience had been I usually feel 100% better if I bring my own. During a busy and sometimes stressful day it's one less thing that can turn your day upside down.
I found the below sandwich bread in the bakery section at Trader Joe's and was surprised to see such a big slice. Most gluten free breads are mini in size compared to regular loafs. The bread is also DAIRY and SOY free. The bread was light and was perfect for a lunch time sandwich for just $3.99!

Sprinkles in La Jolla

I don’t know if it is a blessing or a problem but Sprinkles in La Jolla is walking distance from my office. I constantly want to take a short walk to get an incredible gluten free cupcake.

 On February 10th, I will definitely be walking over and getting a cupcake because 100% of the proceeds from Sprinkles Red Velvet and Gluten Free Red Velvet cupcake sales with go to benefit Life Rolls On.

 Support a sweet cause with The Bachelor and The Bachelorette's Tenley Molzahn and Kiptyn Locke- they will be there from 12 - 2 to serve sweet cupcakes!

Life Goes On is dedicated to improving the quality of life for young people affected by spinal cord injury and utilizes action sports as a platform to inspire infinite possibilities despite paralysis.
A cupcake is the perfect treat for a celebration, a just because treat, a bad day delight BUT on February 10th it’s more than just a bite of sweetness it’s a great contribution at the same time.
