Gluten Free Chocolate Silk Pie

So I LOVE chocolate if you couldn't already tell from the many chocolate recipes I have posted, but what better way to start the New Year than with this yummy, EASY crowd pleaser chocolate silk pie? I used Gluten Not Included (GNI) Bakery's premade pie crust. Click HERE to visit GNI's website.


1 GNI Bakery Pie Crust
1 pkg. (3.9 oz.) Chocolate Instant Pudding and Pie Filling
1 1/2 cups cold milk
1 (8 oz.) container Cool Whip Lite, divided into 2 (1 cup) portions

1. Bake pie shell for 8 minutes at 350 degrees F.

2. While the pie crust is baking beat pudding mix and milk with whisk for 2 minutes making sure to mix until smooth and lumps are gone. Spoon half into crust.

3. Stir 1 cup Cool Whip into remaining pudding and spoon over pudding layer in crust.

4. Top with remaining Cool Whip and refrigerate for 2 hours. 

Optional Topping: Grate 1/2 Hersey chocolate bar and sprinkle shaved pieces on top.

Wow...now I'm craving a piece after I wrote this post...
