Fall is Here- Chili, Cornbread & Charger games!

Fall: the air is crisper, the leaves are turning colors, and it is finally time to warm yourself with soups, stews and CHILIS!

Fall is my favorite season because of the food associated with this time of year. With the holidays right around the corner I get anxious to start decorating cookies and planning our Thanksgiving Feast but until then I get to enjoy my FAVORITE C’s- Chili, Cornbread & Charger games!

Being a celiac- I was finally getting use to making my own bread- but with the discovery of El Torito’s Sweet Corn Cake- making cornbread from scratch is not your ONLY option anymore!


El Torito’s Sweet Corn Cake is gluten free and EASY to make! Follow the directions on the back and enjoy with my mom's Chili creation! It is a family tradition at Halloween to cook a pot of chili and hand out candy, oooo ya and this year we get to add one more thing to the list- cheering on the San Diego Chargers!


Enjoy!

2 lbs organic ground beef
3 cans chili beans
1 can kidney beans
1 can stewed tomatoes
2 cloves garlic, minced finely
2 cups chopped onion
4 teaspoons chili powder (McCormick's)
2 teaspoon salt
1/2 teaspoon ground pepper

Brown organic ground beef in a large skillet. Once done add beef, chili beans, kidney beans, stewed tomatoes, garlic, onion, chili powder, salt and pepper together in a large pot. Heat on low for 90 minutes.

Ladle into bowls, top with shredded cheddar cheese and finely chopped green onions. Don't forget the cornbread! Serves 10 to 12

Up Up & Away Gluten Free!

This past week I flew on Alaska Airlines. I came prepared with my own “in-flight” snack to enjoy: Luna bars, sliced apples, and trail mix for the 5 hour flight.

Like many of you are familiar- traveling can be a bit difficult, I have learned throughout the years to ALWAYS bring my own food rather than relying on the food options on the plane and the various fast food options in the terminals.

After boarding the plane, I was pleasantly surprised when I opened the “in-flight” menu to find a snack pack titled “gluten free!” It was early in the morning and thought am I reading this correctly?

Italian Night- Lasagna- Delicious & Gluten Free!!

I would like to introduce the BEST brand of gluten free noodles for making lasagna...Ener G Foods! It only took me 4 years to weed out all the other brands, but this past Saturday was a mile stone! I was able to make a gluten free lasagna dish that the noodles didn't break apart right after I boiled them.

Below is a SIMPLE recipe that is enjoyed by ALL using my favorite- Classico Tomato & Basil Sauce. I use to think a great lasagna took hours to prepare, but after this meal I might even have time to cook it on a work day! No promises though :)

You will be saying "Ancora un pochino, per favore" after your first bite!


È squisito Lasagna!

Ingredients

2 lb. ground beef
4 Italian sausages
1 cup onion
1 clove garlic, minced

32 oz. Classico Tomato & Basil Sauce
1/2 cup dry red wine
2 teaspoon dried basil, crushed
1 teaspoon salt
1/4 teaspoon pepper

16 oz. cottage cheese
2 cups shredded mozzarella cheese
1/2 cup shaved Parmesan cheese
2 eggs
1/4 cup parsley

1 box (16 oz.) Ener G Foods Rice Pasta Lasagna noodles

In large skillet cook beef, sausage, onion and garlic till meat is brown. Drain off fat. Stir in tomato sauce, wine, basil, salt and pepper. Bring to a broil; reduce heat. Boil gently, uncovered, about 10 minutes or till desired consistency, stirring occasionally.

Meanwhile, cook pasta in boiling water just till tender, drain.

Combine eggs, cottage cheese, Parmesan and parsley in separate bowl.

Arrange half of the lasagna noodles in bottom of a greased 13 x 9 inch baking dish. Spread with half of the cheese mixture, half of the meat sauce, and half of the mozzarella cheese. Repeat only the layers of pasta, cheese mixture, and meat.

Cover with foil. Bake in 375 F oven for 30 minutes. Uncover; add the remaining mozzarella cheese. Bake about 15 minutes longer or till heated through. Let stand 10 minutes before serving. Makes 8 to 10 main dish servings.
